All right we are back and we are going to find some meals because people are spending so much money at the grocery store families are really feeling this budget crunch so we brought in Jen luky social media star known as Jen eats good to help us turn $50 so many groceries

Into five meals so many people follow you in this studio so wait a minute $50 in groceries and this is the grocery list right here so what’s the trick so well thank you so much for having me so excited to be here the trick there’s a

Couple of things so the first thing is I always recommend have a plan go to the grocery store with a list the last thing you want to do is show up and have no idea what you’re going to make so that’s where you want to start the other thing

You want to do is buy in bulk and you also want to reuse the same ingredients for multiple recipes so if you’re buying your rice for one recipe use it again in another recipe or crushed tomatoes or beans whatever it is you want to use it

Up you want to use everything that you buy so you’re not wasting anything and then you’re going to save cost that way and then you also just want to go for those ingredients that are a little bit more budget friendly like these canned goods like some of the ingredients I’m

Going to speak to in a few minutes rice and having a stocked pantry is really key for this having your basic spices your basic sauces like olive oil or maple syrup whatever you normally use having that there is going to help you create all your your meals in and around

That I got my groceries this time at Trader Joe’s you can go anywhere I like to shop just for the most budget friendly ingredients all right you did some of the things that you talked about right there in your menu so let’s jump to that one of the recipes is a one pot

Spinach artichoke chicken and rice now this is in my Lane this is delicious for me tell me how you did it and why did you choose chicken thighs well I like to use chicken thighs one because I find they’re just a more budget friendly source of protein and they’re really

Forgiving you’re going to make it in this recipe you’re going to use your rice all of your other ingredients but everything’s going to be done at the same time and you don’t need to worry as much about overcooking so it’s budget friendly and it’s a lot easier to cook

For somebody who’s a little bit newer you’re going to get your veggies in this recipe too your baby spinach your artichokes and then you’re going to use some of those Pantry Staples like olive oil garlic powder oregano and rice and this is a family of four so you’ve got

Everybody covered at home I’m going let you move that way while I sample this Rebecca’s going to work I’m well I’m going for the vegan chili next you you made it meatless to save some money there yeah and that’s a great tip for saving money try some of the plant-based

Proteins if you’re not somebody that would normally reach for it that’s why I like to do a mix in these meal plans so this has three types of beans it has black beans chickpeas kidney beans and those Pantry Staples again your spices you’re going to use paprika cumin and

It’s got great flavor that’s also a trick right you make it spicy you give the flavor to it with the spices yeah yeah and that’s all about utilizing the pantry Stables as well and then you’re going to see you’re using that onion again you’re using the crushed tomatoes

You’re taking advantage of those canned goods but you’re still making a dish that’s has a lot of protein and it tastes really good I’m telling you that Arch choke chicken was amazing so in the stuffed peppers you used um ground turkey but some of the stuff that you

Had from the other meals exactly yeah so I use ground turkey I find it’s a leaner meat and and it’s still going to cost a little bit less than the ground beef but you’re also reusing you’re reusing the rice you’re reusing the crushed tomatoes you’re reusing the baby spinach and the

Onion so it’s a completely different dish but you’re using the same recipes but it’s not going to feel like you’re eating the same thing every night for dinner and that’s what I love so different even though you’re using a lot of the things from the chili it tastes like a

Complet here you did something really interesting with avocado yeah it’s actually broccoli and spinach in the sauce so that’s what’s actually bringing the GRE the broccoli and yeah and you’re using cashews as well so I like to use cashews as a sub for dairy so you’re going to blend them up with the

Vegetables and you’re making this creamy green sauce which is really delicious and cashews they’re a little bit more expensive but you’re using them in multiple dishes throughout so if you’re going to stretch it and buy and bulk you’re going to be able to make it worth it and you’re replacing the costum of

And you’re going to get your 5-year-old to eat those vegetables because you mixed it all up okay last dish so the last dish is the sticky tofu Bowl I love cooking with tofu that’s delicious looking it really is it really is and cooking with tofu is great because it’s

A budget friendly plant-based protein Source it’s usually about $2 for a block which is really cheap if you haven’t tried it before it’s so so good A lot of people who try my recipes haven’t tried tofu before and then I get them to try

It and they love it and you can add it to your grocery shopping and not spend that much money and you use some of these budget friendly vegetables as well you carried the cashews over into that that’s a brilliant idea okay well done I’m so glad we tried these cuz I

Genuinely loved every single one of them I will be making them at home and you can get the full shopping list and all of these recipes on good morning am.com thank you Jen well hey there GMA fans Robin Roberts here thanks for checking out our YouTube channel lots of great
